Cheese and potato bake with sausages
Layers of thinly sliced potato and onion baked in milk under a bubbling cheddar top, with a tray of sausages roasting alongside. Simple, cheap and very cheering.
Ingredients
- 1000 g Potatoes, peeled and very thinly sliced
- 1 Onions, thinly sliced
- 25 g Butter, plus a little for the dish
- 150 g Cheddar, grated
- 400 ml Milk
- 0.5 Vegetable stock cubes, crumbled into the milk
- 1 g Black pepper
- 8 Pork sausages
- 10 ml Vegetable oil
- 300 g Frozen peas
Method
- Heat the oven to 190°C (170°C fan) and butter a baking dish. Warm the milk with the crumbled stock cube until steaming, stirring to dissolve it.
- Layer the potato slices and onion in the dish, scattering most of the cheese and a twist of pepper between the layers. Pour over the hot milk, dot with the butter and scatter the last of the cheese on top.
- Cover with foil and bake for 30 minutes, then uncover and bake until golden and bubbling and a knife slides easily through the potatoes.
- When the foil comes off, toss the sausages in the oil on a separate tray and roast on the shelf above until browned and cooked through.
- Cook the peas in boiling water for the last few minutes, then serve the bake with the sausages and peas.
