Steak sandwiches with fried onions
Thin slices of quick-seared steak piled into toasted ciabatta with soft, sweet fried onions. A treat of a Friday tea that's done in 20 minutes.
Ingredients
- 450 g Sirloin steaks, 2 steaks, fat trimmed
- 2 Onions, thinly sliced
- 30 ml Vegetable oil
- 15 g Butter
- 2 g Salt
- 1 g Black pepper
- 2 Ciabatta, each cut in half, then split
- 0.5 Lettuce, leaves separated
- 15 g English mustard
- 40 g Mayonnaise
Method
- Cook the onions in half the oil and the butter in a frying pan over a medium-low heat, stirring often, until soft, sticky and golden. Keep warm.
- While the onions cook, take the steaks out of the fridge, rub with the rest of the oil and season well with salt and pepper.
- Heat a second frying pan until very hot and cook the steaks to how you like them, about 2 to 3 minutes a side for medium, then rest on a board.
- Toast the cut sides of the ciabatta in the steak pan to soak up the juices.
- Slice the steak thinly across the grain, pile it into the ciabatta with the onions, and put out the lettuce, mustard and mayo for everyone to add their own.
