Crispy chicken burgers with chips
Golden breadcrumbed chicken breast in a soft bun, with oven chips on the side. The burger-van favourite, made at home without the deep fat fryer.
Ingredients
- 500 g Chicken breast, 2 large, each halved through the middle into 2 thin fillets
- 40 g Plain flour
- 1 Eggs, beaten
- 100 g Panko breadcrumbs
- 2 g Paprika
- 2 g Salt
- 30 ml Vegetable oil
- 4 Burger buns, split
- 750 g Oven chips
- 0.5 Lettuce, shredded
- 60 g Mayonnaise
Method
- Heat the oven to 220°C (200°C fan). Spread the chips over a large baking tray and get them in, following the packet timings (usually about 25 minutes).
- Put the flour, seasoned with the paprika and salt, on one plate, the beaten egg in a shallow bowl and the breadcrumbs on another plate.
- Dip each piece of chicken in the flour, then the egg, then press it firmly into the breadcrumbs so it's well covered.
- Lay the chicken on a lightly oiled tray, drizzle over the rest of the oil and bake on the shelf above the chips until golden and cooked through with no pink in the middle, turning once.
- Warm the buns for the last couple of minutes. Put out the lettuce and mayo so everyone can build their own, and serve with the chips.
