Chicken and chips with peas or beans
Crisp-skinned roast chicken legs, a tray of oven chips and a choice of peas or baked beans. Simple, cheap and everybody's happy.
Ingredients
- 4 Chicken legs
- 15 ml Vegetable oil
- 2 g Paprika
- 1 g Dried thyme
- 3 g Salt
- 1 g Black pepper
- 900 g Oven chips
- 300 g Frozen peas
- 415 g Baked beans
Method
- Heat the oven to 200°C (180°C fan). Rub the chicken legs with the oil, paprika, thyme, salt and pepper and sit them skin side up in a roasting tin.
- Roast the chicken for 45 minutes until the skin is crisp and the juices run clear when the thickest part is pierced.
- When the chicken has 25 minutes left, spread the oven chips on a separate tray and bake on the shelf below, turning halfway.
- Five minutes before everything's ready, simmer the peas in a pan of boiling water and warm the beans in a small pan of their own.
- Rest the chicken for a couple of minutes, then serve with the chips and everyone's choice of peas or beans.
