Family lasagne with a spare tray for the freezer
Cook one rich beef lasagne for tonight and one to freeze for a busy week. Both come from the same pan of ragù.
Ingredients
- 1000 g Beef mince
- 2 Onions, finely chopped
- 300 g Carrots, grated
- 1 Garlic, crushed
- 1200 g Chopped tomatoes, 3 tins
- 60 g Tomato purée
- 8 g Mixed herbs
- 30 ml Olive oil
- 100 g Butter
- 100 g Plain flour
- 1200 ml Milk
- 500 g Lasagne sheets
- 200 g Cheddar, grated
- 50 g Parmesan, grated
- 10 g Salt
- 3 g Black pepper
Method
- Soften the onions and carrots in the olive oil in your biggest pan for 10 minutes. Stir in the garlic for 1 minute.
- Add the mince and cook until browned, breaking it up with a spoon, about 10 minutes.
- Stir in the tomatoes, purée and herbs. Season and simmer gently for 30 minutes, until thick and rich.
- Meanwhile make the white sauce. Melt the butter, stir in the flour for 1 minute, then add the milk gradually, stirring, until smooth. Simmer for 5 minutes and stir in half the cheddar.
- Heat the oven to 200°C (180°C fan). Use two large dishes. Layer ragù, pasta sheets and white sauce in each, finishing with white sauce, then the rest of the cheddar and the parmesan.
- Leave the dish you are freezing to cool completely. Bake the other for 40 minutes until golden and bubbling, then rest for 10 minutes before cutting.
