Creamy chicken and mushroom pasta
Tender chicken, golden mushrooms and spinach in an easy cream sauce that the whole family tends to finish.
Ingredients
- 350 g Penne
- 450 g Chicken breast, sliced into strips
- 250 g Mushrooms, sliced
- 1 Onions, finely chopped
- 0.5 Garlic, cloves, crushed
- 200 ml Double cream
- 100 g Spinach
- 1 Chicken stock cubes
- 30 g Parmesan, grated
- 20 ml Olive oil
- 5 g Salt
- 2 g Black pepper
Method
- Cook the penne in salted boiling water for 11 minutes.
- Meanwhile, heat the oil in a large frying pan and cook the chicken over a medium-high heat for 6 minutes, until golden. Season and lift out onto a plate.
- Add the onion and mushrooms to the same pan and cook for 6 minutes, until the mushrooms have shrunk and browned. Stir in the garlic for 1 minute.
- Crumble in the stock cube, pour in 100ml of the pasta water and let it bubble, then add the cream and return the chicken to the pan. Simmer for 3 minutes.
- Stir in the spinach until it wilts, then tip in the drained pasta and the parmesan. Loosen with a splash more pasta water if needed and serve.
