Cheese and spring onion mini scones
Little savoury scones, golden and cheesy, ready to split and butter or top with ham. They're quick to make and good for a party, a picnic or a lunchbox.
Ingredients
- 250 g Self-raising flour
- 3 g Baking powder
- 1 g Salt
- 3 g English mustard, powder or ready-made
- 60 g Butter, cold, cubed
- 100 g Cheddar, grated
- 3 Spring onions, finely sliced
- 130 ml Milk
- 1 Eggs, beaten, to glaze
- 40 g Butter, to serve
Method
- Heat the oven to 220°C (200°C fan). Mix the flour, baking powder, salt and mustard, then rub in the butter. Stir in most of the cheese and the spring onions, then the milk, to make a soft dough.
- Pat out to 2.5cm thick on a floured surface and stamp out 5cm rounds. Put on a lined tray, brush with egg and top with the remaining cheese.
- Bake for 10–12 minutes until risen and golden. Serve warm, split and buttered.
