Chinese smashed cucumber salad
Cucumbers bashed with a rolling pin so they crack into craggy pieces that soak up a garlicky soy, vinegar and chilli oil dressing. Cold, crunchy and addictive, from Sichuan.
Ingredients
- 2 Cucumber
- 2 g Salt
- 0.2 Garlic, crushed
- 20 ml Soy sauce
- 20 ml Rice vinegar
- 5 g Caster sugar
- 10 ml Sesame oil
- 1 g Dried chilli flakes
- 15 ml Vegetable oil
- 5 g Sesame seeds, toasted
- 5 g Fresh coriander, chopped
Method
- Lay the cucumbers on a board and bash them with a rolling pin until they split. Cut into bite-size chunks, toss with the salt and leave in a sieve for 10 minutes to drain.
- Put the chilli flakes in a heatproof bowl, heat the vegetable oil until shimmering and pour it over. Stir in the garlic, soy sauce, vinegar, sugar and sesame oil.
- Shake the cucumbers dry, toss with the dressing and scatter with sesame seeds and coriander. Serve cold.
