Catalan tomato bread (pan con tomate)
Toasted bread rubbed with garlic and ripe tomato, then soaked in good olive oil and salt. It's on every tapas table in Catalonia, and in summer when tomatoes are at their best it's hard to beat.
Ingredients
- 1 Ciabatta, or a rustic loaf, sliced
- 4 Tomatoes, very ripe
- 0.1 Garlic, peeled and halved
- 40 ml Olive oil
- 2 g Salt, flaky if you have it
Method
- Toast or griddle the bread slices until crisp and golden at the edges.
- Halve the tomatoes and grate the cut sides on the coarse side of a box grater into a bowl, leaving the skins behind. Season with a pinch of salt.
- Rub each hot toast lightly with the cut garlic, spoon over the tomato pulp, drizzle generously with olive oil and finish with salt. Serve straight away, on its own or with slices of cured ham alongside.
