Banana chocolate chunk blondies
Chewy, golden, brown-sugar blondies studded with chocolate and made with a ripe banana. A one-pan melt-and-stir bake that's ideal for small helpers.
Ingredients
- 125 g Butter
- 175 g Soft brown sugar
- 1 Eggs
- 5 ml Vanilla extract
- 1 Bananas, ripe, mashed
- 175 g Plain flour
- 3 g Baking powder
- 1 g Salt
- 100 g Dark chocolate, chopped into chunks
Method
- Heat the oven to 180°C (160°C fan) and line a 20cm square tin with baking paper.
- Melt the butter in a large pan, take off the heat and stir in the sugar. Let it cool for a few minutes, then beat in the egg, vanilla and mashed banana.
- Stir in the flour, baking powder and salt, then most of the chocolate.
- Spread into the tin, scatter over the rest of the chocolate and bake for 22 to 25 minutes, until golden and just set in the middle.
- Cool in the tin before cutting into 12 squares; they firm up as they cool.
