Carrot and apple muffins
Soft, lightly spiced muffins packed with grated carrot, apple and raisins, and no butter needed. Kids can grate, stir and spoon, and they're great in lunchboxes too.
Ingredients
- 250 g Self-raising flour
- 5 g Baking powder
- 120 g Soft brown sugar
- 5 g Ground cinnamon
- 2 Eggs
- 100 ml Vegetable oil
- 80 ml Apple juice
- 150 g Carrots, finely grated
- 1 Apples, grated, skin on
- 60 g Raisins
Method
- Heat the oven to 190°C (170°C fan) and line a 12-hole muffin tin with cases.
- Stir the flour, baking powder, sugar and cinnamon together in a big bowl.
- In a jug, whisk the eggs, oil and apple juice. Stir in the carrot, apple and raisins.
- Pour the wet into the dry and fold together until only just mixed; a few lumps are fine and keep them light.
- Spoon into the cases and bake for 20 to 22 minutes, until risen, golden and springy. Cool on a rack.
