Maple baked apples with oaty stuffing
Whole apples stuffed with oats, raisins and cinnamon and baked until soft and syrupy. A cosy, lighter pudding that happens to be vegan.
Ingredients
- 4 Apples, large eating or Bramley apples
- 40 g Rolled oats
- 40 g Raisins
- 30 g Soft brown sugar
- 3 g Ground cinnamon
- 30 g Dairy-free spread
- 30 ml Maple syrup
- 100 ml Apple juice
- 200 g Dairy-free yoghurt
Method
- Heat the oven to 180°C (160°C fan). Core the apples with a corer or small knife, making the hole a bit wider at the top. Score a line round the middle of each so the skins don't burst. Stand them in a small baking dish.
- Mix the oats, raisins, sugar, cinnamon and spread with your fingers until clumpy. Pack it into the apples, piling any extra on top.
- Drizzle over the maple syrup, pour the apple juice into the dish and bake for 35 to 40 minutes, basting once, until the apples are soft right through.
- Serve warm with the juices from the dish spooned over and a dollop of yoghurt.
