Halo-halo sundaes
A fun take on the Philippines' favourite summer treat: layers of fruit, sweet red beans and ice with a splash of evaporated milk and a scoop of ice cream on top. Everyone builds their own.
Ingredients
- 120 g Sweetened red bean paste
- 1 Mango, diced
- 1 Bananas, sliced
- 200 g Pineapple chunks (tinned), drained
- 160 g Evaporated milk, chilled
- 400 ml Ice cream, vanilla or ube if you can find it
- 20 g Desiccated coconut, lightly toasted
Method
- Put the beans, mango, banana and pineapple in separate bowls on the table so everyone can choose. Crush a few handfuls of ice cubes in a sealed bag with a rolling pin.
- In tall glasses, layer a spoonful of red beans, then the fruit, then a big spoonful of crushed ice.
- Pour a little evaporated milk over each, top with a scoop of ice cream and a sprinkle of toasted coconut. Halo-halo means 'mix-mix', so stir it all up with a long spoon before eating.
