Aussie lamingtons
Squares of light vanilla sponge dunked in chocolate icing and rolled in coconut, the classic Australian bake sale treat. Messy, fun work for little hands.
Ingredients
- 175 g Butter, softened
- 175 g Caster sugar
- 3 Eggs
- 175 g Self-raising flour
- 30 ml Milk
- 5 ml Vanilla extract
- 300 g Icing sugar
- 30 g Cocoa powder
- 20 g Butter
- 100 ml Milk
- 150 g Desiccated coconut
Method
- Heat the oven to 180°C (160°C fan) and line a 20cm square tin with baking paper.
- Beat the butter and sugar until pale and fluffy, then beat in the eggs one at a time. Fold in the flour, then the milk and vanilla.
- Spread into the tin and bake for 25 minutes, until risen and springy. Cool completely, then cut into 16 squares. A day-old sponge is easier to dip, so you can bake it ahead.
- Melt the butter into the milk in a small pan, then whisk in the sifted icing sugar and cocoa until smooth and runny. Pour into a shallow bowl. Tip the coconut into another.
- Using two forks, dunk each square in the chocolate, let the excess drip off, then roll it in the coconut. Set on a rack for 30 minutes to firm up.
