Chocolate orange mousse
A rich, airy dark chocolate mousse with orange zest folded through, a nod to the French classic mousse au chocolat. Just four ingredients and set in the fridge.
Ingredients
- 200 g Dark chocolate, 70%, broken up
- 4 Eggs, separated, British Lion stamped
- 40 g Caster sugar
- 1 Oranges, zest only, plus a few strips to decorate
Method
- Melt the chocolate in a bowl over a pan of barely simmering water, then leave to cool for 5 minutes.
- Beat the egg yolks and orange zest into the chocolate. It will thicken; that's fine.
- In a clean bowl whisk the egg whites to soft peaks, then whisk in the sugar a spoonful at a time until glossy.
- Stir a big spoonful of the whites into the chocolate to loosen it, then gently fold in the rest until no white streaks remain.
- Spoon into small glasses or one bowl and chill until set.
