Proper sardines on toast, Mediterranean style: garlicky toast piled with sardines, crushed tomatoes, lemon and parsley. A five-minute starter or light lunch.
Ingredients
- 0.5 Bread, 4 thick slices, sourdough if you have it
- 0.1 Garlic, a halved clove
- 15 ml Olive oil
- 200 g Cherry tomatoes, halved
- 240 g Tinned sardines, two tins in olive oil, drained
- 0.5 Lemons, zest and juice
- 0.5 g Dried chilli flakes, optional
- 5 g Fresh parsley, chopped
- 1 g Black pepper
Method
- Toast the bread, then rub each slice with the cut side of the garlic and drizzle with a little oil.
- Warm the rest of the oil in a frying pan and cook the tomatoes until they soften and burst. Add the sardines, breaking them up a little, and warm through.
