Portuguese sardine, pepper and potato traybake
Inspired by Lisbon's summer sardine feasts: smoky roast potatoes and peppers with tinned sardines warmed through on top. A cheap, cheerful one-tray dinner.
Ingredients
- 800 g Potatoes, cut into thin wedges
- 2 Peppers, cut into strips
- 1 Red onions, cut into wedges
- 0.3 Garlic, cloves left whole and bashed
- 3 g Smoked paprika
- 40 ml Olive oil
- 3 g Salt
- 250 g Cherry tomatoes
- 360 g Tinned sardines, three tins in olive oil, drained
- 1 Lemons, wedges
- 10 g Fresh parsley, chopped
Method
- Heat the oven to 220°C (200°C fan). Toss the potatoes with half the oil and the salt on a large tray and roast for 20 minutes.
- Toss the peppers, onion and garlic with the rest of the oil and the paprika, add to the tray and roast for 15 minutes more.
- Add the tomatoes, lay the sardines on top and return to the oven until the tomatoes blister and the sardines are hot.
- Scatter with parsley and serve with lemon wedges for squeezing.
