Creamy salmon, pea and spinach pasta
Soft flakes of salmon, sweet peas and spinach in a lemony crème fraîche sauce. A gentle, creamy pasta most children will happily eat.
Ingredients
- 400 g Fusilli
- 3 Salmon fillets, skinless
- 10 ml Olive oil
- 0.1 Garlic, crushed
- 200 g Crème fraîche
- 150 g Frozen peas
- 100 g Spinach
- 1 Lemons, zest and juice
- 10 g Fresh dill, chopped, or parsley
- 3 g Salt
- 1 g Black pepper
Method
- Cook the pasta in salted boiling water, adding the peas for the last 2 minutes. Save a mugful of pasta water, then drain.
- Meanwhile fry the salmon in the oil in a large frying pan for about 3 minutes a side until just cooked. Lift out and break into big flakes.
- Lower the heat, add the garlic for 30 seconds, then the crème fraîche, lemon zest and a splash of pasta water. Stir in the spinach until it wilts.
- Toss in the pasta and peas, then gently fold in the salmon, lemon juice and dill. Loosen with more pasta water if needed and season to taste.
