Miso-glazed mackerel with sesame greens and rice
Mackerel is cheap, full of omega-3 and loves a sweet-salty Japanese-style miso glaze that caramelises under the grill in minutes.
Ingredients
- 480 g Mackerel fillets, about 8 fillets, pin-boned
- 40 g White miso paste
- 15 g Honey
- 15 ml Mirin
- 15 ml Soy sauce
- 300 g Jasmine rice
- 300 g Pak choi, halved
- 200 g Broccoli, small florets
- 0.1 Garlic, sliced
- 10 ml Sesame oil
- 5 g Sesame seeds
- 2 Spring onions, finely sliced
Method
- Rinse the rice, then cook it with 450ml water in a covered pan on the lowest heat until the water has gone. Leave it covered off the heat.
- Mix the miso, honey, mirin and soy sauce into a smooth paste. Heat the grill to high.
- Lay the fillets skin-side up on a foil-lined tray and grill for 3 minutes until the skin crisps. Turn them, spread the glaze over the flesh and grill again until bubbling and starting to char at the edges. Keep an eye on it: the glaze catches quickly.
- Meanwhile stir-fry the broccoli in the sesame oil with a splash of water for 3 minutes, then add the pak choi and garlic until just wilted. Scatter with sesame seeds.
- Serve the mackerel on the rice with the greens, topped with spring onions.
