Ingredients
- 290 g Tinned tuna, two tins, drained
- 150 g Sweetcorn, drained if tinned
- 60 g Mayonnaise
- 2 Spring onions, finely sliced
- 150 g Cheddar, grated
- 8 Tortilla wraps
- 10 ml Vegetable oil
- 1 Cucumber, cut into sticks
- 200 g Cherry tomatoes
- 150 g Salsa
Method
- Mix the tuna, sweetcorn, mayonnaise and spring onions in a bowl.
- Lay out 4 tortillas, scatter each with half the cheese, spread over the tuna mix, then the rest of the cheese. Top with the other tortillas and press down.
- Brush a large frying pan with a little oil and cook the quesadillas one at a time over a medium heat, about 2 to 3 minutes a side, until golden and the cheese has melted. Keep them warm in a low oven.
- Cut into wedges and serve with cucumber sticks, tomatoes and salsa.
