Cheese and onion potato pie
A Lancashire-style crustless pie of fluffy cheesy mash and soft onions, baked with sliced tomatoes on top until golden. Cheap, cosy and loved by kids.
Ingredients
- 1200 g Potatoes, floury, peeled and chunked
- 2 Onions, thinly sliced
- 50 g Butter
- 100 ml Milk
- 200 g Cheddar, mature, grated
- 5 g English mustard, optional
- 2 Tomatoes, sliced
- 400 g Baked beans
Method
- Boil the potatoes in salted water until very tender.
- Meanwhile cook the onions slowly in half the butter until soft and sweet.
- Heat the oven to 200°C (180°C fan). Drain and mash the potatoes with the rest of the butter and the milk, then beat in the onions, mustard and three-quarters of the cheese. Season.
- Spread into a baking dish, lay the tomato slices on top, scatter with the rest of the cheese and bake until golden and crisp at the edges.
- Warm the beans and serve alongside.
