Creamy sausage and tomato pasta bake
Chunks of sausage in a creamy tomato sauce with pasta, baked under bubbling cheese. A midweek dinner that empties the dish every time.
Ingredients
- 6 Pork sausages
- 15 ml Olive oil
- 1 Onions, chopped
- 0.2 Garlic, 2 cloves, crushed
- 1 Peppers, diced
- 400 g Chopped tomatoes
- 300 g Passata
- 2 g Dried oregano
- 100 g Cream cheese
- 350 g Penne
- 100 g Cheddar, grated
- 125 g Mozzarella, torn
Method
- Squeeze the sausagemeat out of the skins in little balls straight into a hot pan with the oil and fry until browned all over.
- Add the onion and pepper and soften, then stir in the garlic, tomatoes, passata and oregano. Simmer until thickened, then stir in the cream cheese until smooth.
- Meanwhile cook the penne for 2 minutes less than the packet says, then drain.
- Heat the oven to 200°C (180°C fan). Mix the pasta into the sauce, tip into a baking dish, scatter over the cheddar and mozzarella and bake until golden and bubbling.
