Smash burgers
Thin, crispy-edged beef patties with melted cheese in soft buns, with chips on the side.
Ingredients
- 600 g Beef mince, around 20% fat is best
- 3 g Salt
- 2 g Black pepper
- 100 g Cheddar, sliced thinly
- 4 Burger buns
- 20 g Butter, for toasting the buns
- 600 g Oven chips
- 1 Onions, sliced into thin rings
- 0.5 Lettuce, shredded
- 2 Tomatoes, sliced
- 40 g Ketchup
- 40 g Mayonnaise
Method
- Heat the oven to 220°C (200°C fan) and cook the chips on a tray for 25 minutes, turning once.
- Divide the mince into 8 loose balls and put them on a plate. Do not squash them yet.
- Heat a large heavy frying pan until very hot. Add 2 or 3 balls, then press each one flat with a spatula or a small pan for 15 seconds. Season with salt and pepper.
- Cook for 2 minutes until the edges are crispy, flip, lay a slice of cheese on top and cook for another minute. Repeat with the rest.
- Wipe out the pan, melt the butter and toast the cut sides of the buns for 1 minute.
- Stack two patties in each bun with onion, lettuce, tomato, ketchup and mayo, and serve with the chips.
