Crispy potatoes, onion and salty corned beef topped with a fried egg. A cheap and cheerful classic.
Ingredients
- 340 g Corned beef, chopped into chunks
- 800 g Potatoes, peeled and diced small
- 2 Onions, sliced
- 10 ml Worcestershire sauce
- 4 Eggs
- 415 g Baked beans
- 30 ml Vegetable oil
- 20 g Butter
- 1 g Black pepper
Method
- Boil the diced potatoes for 6 minutes until just tender, then drain and let them steam dry.
- Heat the oil and butter in a large frying pan, add the onions and cook for 6 minutes until golden.
- Tip in the potatoes and fry, pressing down and turning only now and then, for 10 minutes until crisp.
- Stir in the corned beef, Worcestershire sauce and pepper and cook for 5 minutes more, until hot and crispy in places.
- Fry the eggs in a separate pan and warm the beans. Serve the hash topped with an egg, with beans alongside.
