Creamy garlic mushrooms on toast
Mushrooms fried in butter until golden, then bubbled with garlic, a splash of cream and parsley, and piled on hot toast. A pub classic that's ready in quarter of an hour.
Ingredients
- 400 g Mushrooms, thickly sliced
- 30 g Butter
- 10 ml Olive oil
- 0.3 Garlic, 3 cloves, crushed
- 80 ml Double cream
- 8 g Fresh parsley, chopped
- 1 g Salt
- 1 g Black pepper
- 0.5 Bread, 4 thick slices
Method
- Heat the butter and oil in a large frying pan over a high heat. Add the mushrooms and leave them alone for a minute or two before stirring, so they brown rather than steam.
- Turn the heat down, stir in the garlic for a minute, then pour in the cream and let it bubble until it coats the mushrooms. Season and stir in most of the parsley.
- Toast the bread while the cream bubbles. Pile the mushrooms on top and scatter with the rest of the parsley.
