Prawn cocktail with brown bread and butter
The retro favourite, and still a good one: cooked prawns in a pink Marie Rose sauce on crisp little gem leaves, with a dusting of paprika and buttered bread on the side.
Ingredients
- 250 g Prawns, cooked and peeled, patted dry
- 80 g Mayonnaise
- 25 g Ketchup
- 3 ml Worcestershire sauce
- 0.5 Lemons, half juiced, the rest in wedges
- 2 Little gem lettuce, leaves separated and shredded
- 1 g Paprika
- 0.5 Bread, brown, sliced
- 30 g Butter
Method
- Stir the mayonnaise, ketchup, Worcestershire sauce and a squeeze of lemon together. Taste: it should be tangy and gently sweet.
- Fold the prawns through the sauce. Cover and chill until you're ready to eat (it'll keep for a few hours).
- Put the shredded lettuce in small glasses or bowls, spoon the prawns on top and dust with a pinch of paprika. Serve with lemon wedges and buttered bread.
