Suya beef skewers with onion and tomato salad
Nigeria's favourite street food: thin strips of beef rubbed in a smoky, peanutty spice mix and grilled until charred. Served with sharp sliced onion and tomato to cut through the richness. Contains peanuts.
Ingredients
- 600 g Beef stir-fry strips, or rump steak cut into thin strips
- 60 g Roasted peanuts, unsalted if possible, finely ground
- 5 g Smoked paprika
- 3 g Chilli powder, cayenne for a proper kick
- 3 g Ground ginger
- 0.2 Garlic, crushed
- 4 g Salt
- 30 ml Vegetable oil
- 1 Red onions, very thinly sliced
- 3 Tomatoes, sliced
- 0.5 Cucumber, sliced
- 1 Limes, juiced
Method
- Mix the ground peanuts, smoked paprika, chilli powder, ground ginger and salt. Set aside a couple of spoonfuls for sprinkling at the end.
- Toss the beef with the oil and garlic, then with the rest of the spice mix until well coated. Thread onto skewers (soak wooden ones in water first) and leave to sit.
- Arrange the onion, tomato and cucumber on a plate, squeeze over the lime and season with salt.
- Cook the skewers on a hot barbecue or under a very hot grill, turning once or twice, until charred at the edges.
- Sprinkle with the saved spice mix and serve straight away with the salad.
