Courgette and feta fritters with tzatziki
Golden Greek-style fritters packed with courgette, feta and fresh herbs, served with a cool garlicky tzatziki. A brilliant way to use a glut of summer courgettes.
Ingredients
- 3 Courgettes, coarsely grated
- 4 g Salt
- 3 Spring onions, finely sliced
- 10 g Fresh mint, chopped
- 10 g Fresh dill, chopped
- 0.5 Lemons, zested
- 2 Eggs, beaten
- 75 g Self-raising flour
- 1 g Black pepper
- 150 g Feta, crumbled
- 40 ml Olive oil, for frying
- 200 g Greek yoghurt
- 0.5 Cucumber, grated and squeezed
- 0.1 Garlic, 1 clove, crushed
- 5 g Fresh mint, chopped
- 0.5 Lemons, juiced
Method
- Toss the grated courgette with the salt in a colander and leave it to drain over the sink.
- Mix the yoghurt, squeezed cucumber, garlic, mint and lemon juice with a pinch of salt. Chill until needed.
- Tip the courgette into a clean tea towel and squeeze out as much water as you can. This is what makes the fritters crisp.
- In a bowl, mix the courgette, spring onions, mint, dill, lemon zest, eggs, flour and pepper. Finally fold in the crumbled feta.
- Heat a few tablespoons of oil in a large frying pan over a medium heat. Drop in heaped tablespoons of batter, flatten slightly and fry for about 3 minutes on each side until golden. Keep warm in a low oven while you cook the rest, adding more oil as needed.
- Serve the fritters warm with the tzatziki for dipping.
