Sesame prawn toast
The Chinese takeaway classic made at home: a savoury prawn paste spread on bread, pressed into sesame seeds and fried until crisp. Perfect with spring rolls and sweet chilli sauce.
Ingredients
- 200 g Prawns, raw, peeled
- 1 Eggs, white only
- 10 g Cornflour
- 2 Spring onions, finely chopped
- 5 g Fresh ginger, grated
- 5 ml Soy sauce
- 3 ml Sesame oil
- 1 g Salt
- 0.3 Bread, 4 slices of white bread, a day or two old
- 40 g Sesame seeds
- 150 ml Vegetable oil, for shallow frying
Method
- Pat the prawns dry, then blitz in a small food processor (or chop very finely) with the egg white, cornflour, half the spring onions, the ginger, soy sauce, sesame oil and salt until you have a thick, sticky paste.
- Cut the crusts off the bread and spread the prawn paste thickly and right to the edges. Tip the sesame seeds onto a plate and press each slice, paste side down, into them.
- Heat the oil in a large frying pan over a medium heat. Fry the toasts sesame side down until golden, then flip and fry the bread side. Do them in batches so the pan does not get crowded.
- Drain on kitchen paper, cut each slice into four triangles and scatter with the rest of the spring onions.
