Sticky honey garlic chicken wings
Oven-crisp wings tossed in a glossy honey, garlic and soy glaze. American game-night food that disappears in minutes; put lots of napkins out.
Ingredients
- 1000 g Chicken wings, tips removed, split into drumettes and flats if whole
- 10 g Baking powder, helps the skin crisp
- 4 g Salt
- 90 g Honey
- 45 ml Soy sauce
- 0.3 Garlic, finely grated
- 10 g Fresh ginger, finely grated
- 15 ml Rice vinegar
- 1 g Dried chilli flakes, optional
- 5 g Sesame seeds
- 2 Spring onions, finely sliced
Method
- Heat the oven to 220°C (200°C fan) and set a wire rack over a lined roasting tin if you have one.
- Pat the wings really dry with kitchen paper, then toss with the baking powder and salt until lightly coated.
- Spread them out on the rack or tin in a single layer and roast, turning halfway, until deep golden and crisp.
- While the wings cook, simmer the honey, soy, garlic, ginger, vinegar and chilli flakes in a small pan, stirring, until syrupy and reduced by about a third.
- Tip the hot wings into a big bowl, pour over the glaze and toss until shiny. Pile onto a plate and scatter with sesame seeds and spring onions.
