Lemon and herb salmon parcels
Foil parcels of salmon with new potatoes and courgette that steam to perfection on the BBQ or in the oven.
Ingredients
- 4 Salmon fillets
- 500 g New potatoes, halved
- 2 Courgettes, sliced
- 200 g Cherry tomatoes
- 1 Lemons, half sliced, half juiced
- 30 ml Olive oil
- 10 g Fresh parsley, chopped
- 4 g Salt
- 2 g Black pepper
Method
- Boil the potatoes in salted water for 8 minutes until almost tender, then drain.
- Heat the BBQ to medium-hot, or the oven to 200°C (180°C fan). Tear off four big sheets of foil.
- Divide the potatoes, courgettes and tomatoes between the foil sheets and put a salmon fillet on top of each.
- Drizzle with oil and lemon juice, season, and add a couple of lemon slices and the parsley. Fold the foil up and seal the edges into loose parcels.
- Cook on the BBQ with the lid down, or in the oven, for 18 minutes, until the salmon is just flaky.
- Rest for 2 minutes, then open the parcels carefully, as the steam is hot.
